Cassava or Mogo
Cassava is a delicious root vegetable. Cooked here with cumin, ginger, green chilli, ground cumin and coriander, turmeric and fresh coriander. Sprinkled with roasted peanuts. This recipe is a throwback to when my family lived in Kenya in east Africa. 400g

Heating instructions:
Heat the Cassava in a sauce pan on a low to medium heat. Add 4 tablespoons of water and let it warm through gently with the lid on, keeping in all the moisture. Alternatively you can sauté the cassava in a nonstick frying pan with a tablespoon of sunflower oil, make sure you toss them about during cooking so they cook evenly, continue until they are slightly golden.
