Aubergine Bharthu
The aubergines are charred over a naked flame, separated from their skins, then chopped and added to a smokey masala. Made with tempered black cardamon, star anise, fresh chilli, onions, ginger and spices. The result is a deliciously smokey aubergine side or starter. 280g

Remove the film from the tray and place the contents in a non-stick frying pan and heat gently. Keep the Bharthu moving so it heats up evenly.
Garnish with coriander and serve with a slice of lemon and Chapatti.
Tip:
You can eat this dish cold too. Simply add some thick yoghurt and mix through for a delicious dip. Serve with Popadoms.
