Cauliflower & Peas
Cauliflower and peas in a rich tomato base made with cumin, mustard seeds, ginger, chilli, turmeric and spices. This dish has been a favourite at Borough Market since we started!
The traditional way to cook this is to allow the cauliflower to soften and become sweet, however its equally delicious cooked (al dente) so the cauliflower is crunchy, it's up to you. 400g

Store at 4c
Heat the cauliflower and peas in a thick bottomed saucepan with 3 tbsp of water. Simmer for 5 - 8 minutes with the lid on depending on how soft / crunchy you like the cauliflower. Stir occasionally to make sure the sauce is not sticking to the bottom of the pan and the cauliflower is cooked evenly. Add water to the sauce to your desired consistency.
