Dhal Dhokli

Dhokli is made with gram flour, chilli, ginger and sesame seeds formed into a dough. It's then rolled out and cut into ribbons and dusted with rice flour. I prefer ribbons to diamond shapes as they more elegant when served. If you prefer, cut the ribbons into diamond shapes.
The Dhokli is then put, one ribbon or diamond at a time into a delicious
 simmering dhal made with Toor dhal, tomato, peas, jaggery, curry leaves and the magic ingredient: Kokum (dried mangosteen) this creates the signature sour and sweet flavour to this 'khatti-mitti' dhal. So delicious served with a little salted butter.

Heating instructions:
Add water to the dhal and heat in a thick based pan until gently simmering.
Stir occasionally to make sure the dhal does not stick to the bottom of the pan.
Add more water to a single cream consistency erring on the side of slightly watery.
Add the Dhokli one strip at a time, making sure the dhal comes back to a simmer before adding the next ribbon. This stops the Dhokli sticking to itself.
Once all the Dhokli is in the pan simmer for 8-10 minutes. Gently stir being cautious not to break the ribbons, it will begin to thicken. The longer you simmer it the thicker it will become.  I like it when it's the constancy of double cream.
Serve piping hot In a shallow bowl with a little white rice and a knob of salted butter.

Water, Tomato, Pigeon Peas, Peas, Sunflower Oil, Jaggery, Salt, Ginger, Lemon Juice, Coconut (Nuts), Coriander Leaves, Coriander seeds, Cumin seeds, Green Chilli, Mangosteen, Garam Masala, Turmeric, Asafoetida, Chilli Powder, Dried Red Chillies, Curry Leaves. 400g

Ingredients Dhokli: 
Chapatti Flour (Chapati Flour (Wheat)), Water, Chick Pea Flour, Rice Flour, Sunflower Oil, Salt, Ginger, Green Chilli, Sesame Seeds, Coriander Leaves, Sugar, Ground Coriander, Garam Masala, Turmeric. 150g
