Aubergine, Potato & Peas or Ringan Butetta
A mixture of potato and aubergine, peas and spices in a rich tomato based sauce to create a depth of flavour. Always served at special occasions such as weddings as well as being a staple Gujarati dish. 400g

Heat the curry gently on a low heat in a thick bottomed saucepan with 3 tbsp of water, simmer for 8 - 15 minutes with the lid on. Stir occasionally to make sure the sauce does not stick to the bottom of the pan. Add more water to the sauce to your desired consistency. When the potato is soft the dish is ready. Remember to keep the lid on whilst simmering.
Serve with Chapatti or rice and popadoms on the side
